Happy Birthday, Edible Scoop!
It has been a while since a new recipe or post has made its way to the site, so why not sneak in a few words on Edible Scoop’s birthday? At least an explanation is due!
The reason for the lack of attention? Edible Scoop transitioned from a vegetarian site to a vegan site in January 2015, a few months after I made the switch (there were a few vegetarian posts left in the hopper). After transitioning, it occurred to me I had a lot to learn about my new diet and all the new ingredients I was suddenly encountering.
I have been a busy vegan learning as much as I can. I earned the Plant-Based Nutrition certificate from the T. Colin Campbell Center for Nutrition Studies in the fall of 2015. I then began and recently completed the Plant-Based Professional Certificate from Rouxbe Cooking School.
I had a lot of fun and have learned a lot from both programs. I am excited to create tasty new recipes to share!
