Crock-Pot Vegetarian Stew

With temperatures dropping, it’s the perfect time for stew. Rather than beef, this hearty stew uses seitan, making it vegetarian-friendly.

  • 6 red potatoes, cut in half
  • 2 cups baby carrots
  • 10 ounces pearl onions, peeled
  • 8 ounces seitan
  • 2 stalks celery, cut into 1 inch pieces
  • 6 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup red wine
  • 1 tablespoon ketchup
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1 bay leaf
  • 2 tablespoons cornstarch
  • Salt, to taste
  • 2 cups mushrooms


  1. Add potatoes, carrots, onions, seitan, and celery to crock-pot.
  2. In a bowl, stir garlic, broth, wine, ketchup, basil, parsley, rosemary, black pepper, paprika, bay leaf, and cornstarch together. Pour over vegetables in crock-pot. Cover and Cook on low for 4 hours.
  3. Add mushrooms to the crock-pot, and cook on high 2-3 hours longer, or until vegetables are tender.


  • Vegetarian and vegan
  • Use a low-sodium vegetable broth for a healthier dish.
  • If thicker broth is desired, before serving add broth to saucepan and stir in additional water/corn starch. Heat and stir until thickened.
