Cucumber Salad

Now that it’s officially summer, it’s the perfect time for a low-calorie salad that’s quick to pull together. My mother made a similar version of this when I was young. It’s incredibly simple to throw together, yet always a refreshing side and an excellent option for hot summer days.

  • 2 cucumbers, sliced
  • 1 cup white vinegar
  • 1/4 teaspoon freshly ground black pepper
  • 2 cloves garlic, minced


  1. Place cucumbers in a bowl. Pour vinegar over cucumbers and sprinkle with pepper and garlic.
  2. Refrigerate for 1 hour.


  • Vegetarian and vegan
  • I prefer to keep this simple, but if you wish to try variations of this, try adding a few thin slices of onion or a teaspoon of dried dill
