Vegetarian Jambalaya

Before becoming a vegetarian, I enjoyed jambalaya on occasion. After a few years, I finally decided it was time to make a vegetarian friendly version of this Creole dish. One serving of this tasty recipe is only 163 calories! Tofu, vegetarian sausage, or vegetarian chicken could be added to this as well, if desired.

This recipe is adapted from Emeril’s Cajun Jambalaya recipe.

  • Apple Cider Vinegar

  • 1 tablespoon extra virgin olive oil
  • 1/2 onion, diced
  • 4 garlic cloves, minced
  • 1/2 green bell pepper, diced
  • 1 stalk celery, diced
  • 2 zucchini, sliced
  • 14.5 ounce can diced tomatoes, drained
  • 3 bay leaves
  • 1 teaspoon soy sauce
  • 1/2 teaspoon apple cider vinegar
  • 1 teaspoon hot sauce
  • 3 cups vegetable broth
  • 6 ounce can tomato paste
  • 3/4 cup rice, uncooked
  • salt, to taste

Seasoning, adapted from Emeril’s Essense Creole seasoning

  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme


  1. Heat olive oil in skillet over medium heat. Add onion, garlic, bell pepper, and celery to the skillet and sauté until the onion is tender.
  2. Stir zucchini, tomatoes, bay leaves, soy sauce, apple cider vinegar, hot sauce, and seasonings into the skillet. If adding vegetarian meat, add it now. Cook for 2-3 minutes.
  3. Stir vegetable broth, tomato paste, and rice into the skillet. Heat until water has been absorbed and vegetarian meat is done (if using). Stir occasionally.
  4. Remove bay leaves before serving.
